Now here is something we have not done on the BBQ / Braai for a long time.... pork crackling ... sorry to anyone does not eat pork ....Pop the pork roast onto the Ultimate Convector Grill.
Cook for a short period, remove and cut off the outer skin and slice the removed skin, rub with salt and return to the BBQ on a tray or piece of foil. This year's event was MASSIVE All I can say is well done to Berilyn and her team for a well arranged well managed and very successful event The event officially opened at 11:00 and the line at the front gate just kept going and going !! We had set up our display BBQs and also had entered the cooking competition called a "POTJIE" competition. For non South Africans that means "Small Pot" cooking competition. We set up the two Ultimate Convector Grills, with each one loaded with 22 briquettes per basket. The one we had in direct cooking mode and the second one we set up in indirect mode. The one in the direct mode was lit first so that we could get the briquettes to a grey covering mode ready for placing the potjie pot onto the unit. Normally a "Potjie" cooking container is a round pot with three legs that is placed into the fire and allowed to cook over a period of time. We were using a flat bottomed unit more commonly known as a Dutch pot. Various food types can be cooked in this way but the most popular at oxtail, mutton, beef and seafood. Ok, so that is pretty much anything you love ! The potjie process starts with the pot being lightly oiled to prevent sticking of the food to the pot and then popping in something like onions or initiate the cooking process. These are left to brown before the next step starts. Then one by one the rest of the ingredients are added to the batch. Typically the next in would be the meat. We chose Mutton which we cubed and seasoned with mix of herbs, salts and pepper The process is a slow and aromatic process. On the second convector we set up in indirect mode, also with 22 briquettes on each side and the baskets set up on the outside of the base. This unit was going to be used to make our savory bread. This bread has been a favorite with our family and friends for many years and always goes down well. All thurned our great and was enjoyed by friends and family. Cleaning up involved folding up the aluminium foil, that we placed on the base of the Convector grill fire area and emptying the coals from this foil into a bin provided to cold coals. Ok so we have learned to work smart not hard :-) Easy to clean and no mess, no fuss !

Our BBQ's will last years and probably be inherited by your kids, and that after your being the envy of your friends and family for having the best BBQ around. The day arrived and suddenly...The weather was not looking too good for a braai ( BBQ) in Avoca....
Rainy and overcast.... well it started that way, but within a few minutes of setting up the 2 Ultimate Drum Barbeques the sun had popped out is smiling face and it only got better from there. The first to arrive were the long distance traveller's from the South West of Ireland and then on until we were 30 strong around the barbeques. We had set up the Ultimate Drum BBq Convector Grill and also a split Keg BBQ that had been loaned to us, just to make sure we had enough cooking space. The arrangement had become one of ÿou bring the meat and we supply the heat. There were prizes to be won for best presentation and preparation plus second and third place, and the contest was fierce. To make it really fair we got the Chef from the Meetings to be the judge, after all he was the one who could best judge presentation and taste and not be perceived as being biased....and he could speak Afrikaans...what a surprise...well he was born in Netherlands ! Fun was had by all and we look forward to the next event.

BBQtoasties - on the Convector GrillRight, so as promised here we go with the BBQToasties ( well it sounded like a nice name for a Barbeque toasted sandwich ) update... We sliced up the bread we made previously and added a selection of ingredients like chutney as a base, topped with cheese, then some cold meat and tomato, sliced red and yellow peppers, a bit more cheese and then the top piece of bread. We then buttered the outside of the sandwich to stop it sticking onto the folding sandwich grid and slid the loop over the handles, and out onto the fire that we set up in semi direct mode ( baskets slightly apart in the centre of the base ) in the Ultimate Convector Grill. Then we waited about 3 mins and flipped the grid over. By then the bread have started to brown around the edges and we could begin to smell that tell tale toasty smell !! Mmmmm ! Smelt GOOOOD ! We did some without tomato for the fussy ones and some with Gluten Free bread for "The one who may not eat wheat" and they all came out magic. Then we added a bit of thin wood kindling, got the flames up a bit and popped on some pork steaks and steaks. I note that there were some things that were not altogether level with this but a fun well fed time was had by all.... www.braaibeque.com or @braaibeque And....
